Opera Mobile , top of my list. I just really like opera :). Tabbed browsing, faster. Need to buy but it's worth the money.
Coreplayer. Media player replacement. Supports almost everything on Windows Mobile and Media library support. Pocket music player is also popular too and it can use winamp 2.x skins. It is really similar to winamp.
PHM Registry Editor.Free, simple and powerful.You can also check out other softwares the author made. There are many and most seemed interesting. I haven't had tried them all yet, but I will. And I will update this post.
psShutXP. Turn off your PDA's screen or turn the device off like Windows XP. Can't live with out it. It is also beautiful because it supports skins.
Flash player if you really need it.
XnView. Image viewer. Excellent on Desktop Windows too.
Mobile Skype: What I have been using in my attempt to go WiFi phone.
QMaile3: Email notifier. Supports POP3, SMTP, IMAP4, NNTP, RSS, Atom.
MDict: Great dictionary software.
Total Commander: Famous Windows file management tool. It's shareware for desktop and it's so nice that they're offering it free for pocket PC.
Yup, I can't think of anything else that you need right now. Suggestions?

In my opinion, Opera Mobile is not near as good as Opera Mini, and Mini is free. I had Opera Mobile and took it off my 8125 as I didn't find it to be much of an improvement over IE.
OK, I have a few to add, so here's my 2 cents worth :)
BeyondPod is great RSS feed "getter" and it's free. It downloads news and podcasts and is very slick.
FreeStyl Startup is a very nice iPhone-ish desktop. Very easy to configure.
Gotta have Google Maps!
Live Search is a lot like YahooGo!, both have nice features.
OggSync lets you sync with Google Calendar wirelessly and it has a nice free version.
UI Tweaker allows you to make all sorts of changes to your phone. You can change everything from text color, to scroll bar color, all sorts of stuff!
Gotta have some weather info, I like Weather Watcher.
